An egg yolk or two is good for you

Not too long ago, we were being warned about our egg consumption. Eggs are high in cholesterol, they said, especially the yolks, and cholesterol leads to heart disease. We were told that if we couldn’t give up eggs, we should stick to egg whites. And that “medical advice” spawned a food trend that gave birth to countless dishes with yolkless eggs.

Well, if the whites are all I’m allowed, I’d rather not eat eggs at all.

Fortunately, the priests and acolytes of the egg-yolks-are-evil congregation are getting burned at the stake. Recent researches say eating two eggs a day — with the yolks — as part of a low-saturated fat diet lowers “bad” cholesterol. Moreover, not eating the yolks “deprives you of some major nutritional perks.”
